And now, a glimpse into NE Alberta's Aviary, the community-minded Asian-French restaurant from recent NYC transplants Sarah Pliner, Jasper Shen, and Kat Whitehead. The chefs' impressive pedigrees (Pliner and Shen met at Aquavit; Shen and Whitehead at Provence; with some stints at Alain Ducasse at the Essex House and Jean Georges thrown into the mix) combine to create a tapas-style menu (divided up into small, large, and vegetable plates) that also happens to feature beer-flavored ice cream.
The 45-seater (yes, there's a communal table) features all-reclaimed wood banquettes and shelving surrounding a bar-stool-flanked open kitchen; an outdoor patio will open once the weather warms up. Opening date February 1, with lunch service to come later this spring.
