Portland's upcoming StarChefs gala — which celebrates Portland's 2011 Rising Star winners — is scheduled for December 5, and the out-of-town "magazine for culinary insiders" puts its winners to work, as each will be tasked to serve bites of a dish that clenched them a "Star" title. For several chefs, that means tastes of their spot's signature dishes: Team Aviary will cook up its famous crispy pig ear and coconut rice; Le Pigeon's Gabe Rucker will serve his foie gras profiteroles; while "Concept Chef" winner, Olympic Provisions' Elias Cairo will bring a tray of Australian lamb prosciutto and assorted charcuterie.
Meanwhile, ChefStable's Kurt Huffman, winner of the Restaurateur award, will bring a tuna sashimi from recent project Wafu (or, as the StarChefs site refers to it, Wahoo). The complete menu — as well as tasting gala tickers — can be found here.
