EaterWire: Violetta and Olympic Provisions to Open

·Former Roux owner Dwayne Beliakoff's new cafe Violetta will enter soft-opening mode on Wednesday in Director Park, says well-placed buzz. The tiny eatery will feature a cafe-style menu with ex-Lucier Chef Jeremy Niehuss as chef/frontman, Caffe Vita coffee, and ample outdoor seating,

·Across the pond, charcuterie lab/wine bar/refrigeration museum Olympic Provisions (107 SW Washington St.) in the Central Eastside Industrial District is on target to open Wednesday the 18th, says Olympic Provision partner and Clyde Common owner Nate Tilden. Olympic Provisions will be open to the public for lunch-only as well as evening private events through the first of the year. Dinner service may be added in early 2010. With USDA certificate in hand to cure salami, proscuitto, and chorizo on site, Olympic Provisions is said to have more cubic feet of refrigeration than any restaurant in Portland.
