Just two days after Olympic Provisions' soft-opening (party gossip/party pics fully encouraged), Jen Stevenson talks to "meat-curing chef," Elias Cairo (formerly of currently Matt Lightner-helmed Castagna) who, along with Clyde Common exec chef Jason Barwikowski and Clyde Common owner Nate Tilden, will be running this SE Waterfront charcuterie-focused restaurant come sometime next week next Wednesday.
