Ethical Butcher's Big Book Party For Primal Cuts

If you buy something from an Eater link, Vox Media may earn a commission. See our ethics policy.

Berlin Reed, aka "The Ethical Butcher," is serving up Primal Cuts: A Raucous Book Release Celebration with Author Marissa Guggiana on November 18 at Ace Cleaners.

"Primal Cuts: Cooking with America’s Best Butchers" written and photographed by Guggiana, catalogues butchers of every stripe (including Reed). For the release, Reed is carting 16 whole animals into the Cleaners from three different farms and letting three chefs go at 'em (Think Cochon-lite). Beyond meat, music, amuse bouche, and the ubiquitous photo booth will be on hand. Buy a ticket—which at $20 pre-sale is pretty damn cheap—at theethicalbutcher@gmail.com.
