Woo boy. Human scoop machine Nick Zukin confirms that Pinot American Brasserie — the high-concept, mammoth restaurant that opened a scant four months ago in downtown's Indigo building — is now on its third chef in just four months.
Chef Paul Arnold, who replaced original co-owner Bill King and instated a major menu overhaul just two months ago, lasted just as long as his predecessor (aka: not long). Zukin confirms that after eight weeks, Arnold is out in favor of Ryan Smith, most recently of Oregon City's Riverside Bar and Grill.
Third time's the charm? Maybe?
