The French bistro that bought out Micah Camden's Fats space has a name: According to owner (and head chef) Kat Liebman, Cocotte will be a vintage-inspired Parisian bistro and bar (not bakery). "Our food will be locally and responsibly sourced, contemporary regional cuisine," Liebman says. "My cooking style takes inspiration from classic French technique and flavor profiles, and applies them to the ingredients of the Pacific Northwest. Our small, focused menu will change every two weeks. We will also offer a four-course tasting menu, available with or without selected wine pairings."
Liebman, a recent Lucy's Table alum (she also operates a personal chef/cooking school under the LLC Too.Licious), will be joined by sous chef Zoe Hackett (an OCI alum) and bar manager Levi Hacket. Hours of operation are planned Tuesday through Sunday for dinner, with weekend brunch; opening date in spring 2011.
