Last week, downtown slickster Italian spot Nel Centro owner David Machado announced he'd taken over the kitchen from Paul Hyman (now moving on to Belly Timber). Today, Machado gets a little more into the reasons why, despite Mascot Patrick Alan Coleman's retro-sordid affection for the place and an overall sense of assent that it was generally good enough, he decided to stop back into the whites. Machado praised Hyman saying, “Paul is a great guy, a hard worker and a seasoned culinarian. But eight months after a promising opening we weren’t where we needed to be. We had some winning dishes but the food was inconsistent. I could hear the criticism and I tasted it myself. I take responsibility for this situation and I have stepped in to correct it.”Word is Machado's been in the kitchen since February 1st. Anyone tested it out? Given the bucatini a whirl?
