Last week, Scoopface McScooptown Karen Brooks reported that Tommy Habetz and Nick Wood of Bunk Sandwiches, along with Matt Brown of Bladen County Records, had found and signed for a Water Street space for their upcoming Bunk Bar, which is basically gonna be like Bunk except open later and also liquor. Eater tracked down Habetz in between chicken-roasting and meatball-slinging to ask him a few thoroughly salient questions. Which he very graciously answered.
How do you feel now that you've signed the lease?
Like I've been listening to way too much Lil' Wayne.
What are you most excited about in terms of the new place?
Seeing Matt Brown behind the bar. Listening to some bad ass tunes. Seeing the beautiful people of Portland eating Pork Belly sandwiches, late into the night.
What new stuff can people look forward to that they can't get at Bunk Sandwiches?
We will have a real kitchen to work with, with a hood system and everything. So that means that we will be able to do a lot more. My main man, Nick Wood, can make some bad ass(is it ok to use the term, "bad ass" twice in an interview?) Po' Boys, like a French Fry Po' Boy with Duck Gravy, Cochon du Lait Po' Boys... I'm just looking forward to having some more support, in the way of staff, etc. to make all this possible, to focus more on the creative end of things.
Does this mean you're just never going to sleep?
I certainly hope not. Sleep makes me feel rested.
Who's going to be where, when? Are you and Nick splitting time between the two? Or..?
I will be mainly at Bunk Sandwiches. Nick will be running the kitchen at Bunk Bar. Matt Brown will be telling dirty jokes, and occasionally pouring drinks at Bunk Bar.
How did you first come up with the idea?
I stole it from the person who came up with the idea of public drinking establishments. I think his name was Joey Joe Joe Junior Shabadoo...
What do you like most about the neighborhood you'll be in?
Bunk Bar will be that much closer to Jason Barwikowski at Olympic Provisions, the hottest chef in the universe.
Is this just Step 2 towards World Bunk-Domination?
