Halfway through his perfectly-timed (February is the shortest month) Going Vegan project, Oregonian writer Grant Butler checks in to share three vegan restaurants that are, he says, "so tasty they're on my permanent eating-out list."
First up is Ruby Dragon, a Mississippi Marketplace cart that isn't afraid to serve veganaise. Second is Blossoming Lotus, one of the original fancy-vegan places, and the most upscale (cough, expensive) of them all. Third is Prasad, Karen Pride's cart-originated restaurant that just opened in the former Blossoming Lotus space in the Pearl District's Yoga Pearl.
