Cheek Meat is Chic at Metrovino

Will this accursed beard fad never cease? Chef Gregory Denton pays tribute to the facially hirsute by serving braised buffalo cheeks on the new spring menu at his Pearl District bistro, Metrovino. The cheeks are the muscles on either side of the cheek bones, in a cow or a buffalo, and are reputed to be extra flavorful. Also on the spring menu: asparagus, rhubarb, fava beans and lamb. Apparently the regulars at Denton’s temple to wine (95 available by the glass, kept fresh by a magic robot) are adventurous eaters: winter favorites that will remain on the menu include escargot, tripe stew and roasted marrow bones.
