The old Muddy Waters coffee house on Southeast Belmont has closed, and the new Bare Bones Cafe opened in the storefront space in March. As described in the Oregonian:
They lean toward sandwiches and pastries, along with espresso and other coffee drinks. However, they cater to vegan or gluten-free diets while also carrying wheat-based breads and sandwich meats for customers who want to stick with traditional ingredients. The name Bare Bones implies simplicity. It also implies, just a little bit, the idea starving to death and nothing being left but your skeleton, bleached and abandoned in the desert. Maybe if you had lunch here and dinner at Fats and it would all even out? Still it's not the worst cafe name in Portland, but with Rumpspankers gone, what is?
