The Ristretto Roasters Mothership in Beaumont reopened last Thursday after a “one week remodeling done in two days,” describes co-owner (and accomplished writer) Nancy Rommelman. Operatives expecting a redo along the lines of Meier and Frank into Urban Farmer were a tad perplexed, but closer inspection revealed subtle, but significant changes. The front booths are out; a sophisticated standup espresso bar is in. The roasting room was shrunk to make room for a vast communal table (now the Ristretto roasting magic happens at a commercial space on Northeast Hancock and Flint). Other tweaks “make it flow easier,” Rommelman explains, promising further improvements in a week or so. The Ristretto brand has expanded dramatically since Rommelman’s husband Din Johnson (pictured above) opened the narrow café five years ago, notably into a second retail location, a striking modern industrial space along hipster central on North Williams.
