Worth Your Salt?

With higher consumer demand for lower-sodium products, processed-food companies are struggling to cut salt without sacrificing flavor: "Without salt the [Corn Flakes] tasted metallic. The Eggo waffles evoked stale straw. The butter flavor in the Keebler Light Buttery Crackers, which have no actual butter, simply disappeared." Is there a way to have it both ways? [NYTimes]
