When the Charlemagne of Korean food trucks, Bo Kwon, announced the opening of KOi's first pop-up shop earlier this year, it came with the explanation that "Our Koifusion@ locations might be open permanently, for a month, or even just a day. It all depends on that particular location, how happy it makes Portland’s diners, and how happy it makes us."
