Ruby Jewel Scoops Shines on Mississippi Starting Today

Ruby Jewel's brand spankin' new brick-and-mortar store may have had lines out the door during this year's Mississippi Street Fair, but today's technically the first day of business for Lisa Herlinger-Esco's Ruby Jewel Scoops. In addition to the make-your-own ice cream sandwich option, the shop will scoop up signature flavors like honey lavender, caramel with salted chocolate, and banana cream pie from 11am to 11pm.
