As FIN restaurant counts down to its July 28 opening (the resto's almost fully booked for that night, btw), chef/owner Trent Pierce has been putting his touch on the space formerly known as Sel Gris — out goes the sleek industrial look, in comes a light, eco-friendly vibe (all tabletops, including the room-length walk-in bar, were constructed from Endura reclaimed wood). And in addition sitting pretty for the photo op, Pierce also revealed a couple more details about the top-secret staff and menu: Joining the team as raw bar chef is Naomi Wartel, who Pierce once worked alongside with at Micah Camden's Yakuza Lounge; their creations will be paired alongside a 25-bottle wine list that concentrates on pours from coasts around the world.
