The Ethical Butcher Allows People to Bring Home the Bacon. Literally.

The Ethical Butcher's got the cure: The man formerly known as (okay, still known as) Berlin Reed, who heads up the BCN/PDX bacon-of-the-month club, will offer bacon-making classes to curious would-be curers throughout the month of July. "Curing the Ethical Butcher Way" spans three sessions and will experiment with cures ranging from fruit to coffee to booze; participants of all three can expect to go home with eight pounds of pork goodness by the end of the month.
