The Quotable Bourdain

bourdain0150.jpg

In a very good and lengthy interview, Anthony Bourdain talks about the cult of foodies, the democratization of fine dining, and how he's okay with chefs getting famous. He also wants to see the people "doing the large majority of the work in the service industry" get recognized: "If you go to the James Beard Awards, you've never seen so many white people in one room since the Republican National Convention."
