Pork is for sissies. For 10 years, "alternative meat" purveyor Nicky USA has been challenging the Pacific Northwest's best chefs in a cooking competition featuring everything from rabbit to elk to buffalo, and this year's 10th anniversary Wild About Game throwdown, taking place this Sunday at Welshes' Resort at the Mountain, should be of epic proportions.
This year's competitors feature the who's who of PDX gamey best: Jason Barwikowski (Olympic Provisions), Chris Carriker (Gilt Club), Matt Christianson (Urban Farmer), Gregory Denton (Metrovino), Jake Martin (Fenouil), Tony Meyers (Serratto), Naomi Pomeroy (Beast), and Gabe Rucker (Le Pigeon) — with Seth Caswell (of Seattle's Emmer & Rye) thrown in for good measure; demonstrations by Tails & Trotters' Morgan Brownlow and Laurelhurst Market's David Kreifels add to the glorious spectacle.
