How's this for a menu worthy of the Chairman? Naomi Pomeroy's re-creating her should've-freakin-won Iron Chef America menu at Beast this weekend, and for those who missed the judging recap, the five-course, ultra-luxe truffle battle feeds as follows: Cream of celery root & truffle soup with chervil salsa verde; brioche "Croque Madame" with fried prosciutto, poached egg, and truffled brown butter; Kobe beef tenderloin en croute with truffles, truffle salt, and creamed spinach; seared giant sea scallop with truffled wild mushrooms and truffle vinaigrette; and finally, chocolate truffle cake with truffle creme anglaise and a 23-karat gold leaf as the exclamation point.
