The first proof that 2011's shaping up to be the "Year of the Veggie": Aaron Woo, the clarklewis alum who owns Alberta's popular vegetarian/vegan spot Vita Cafe, announced today that the second long-rumored Woo spot is not a second Vita post, but instead a "vegetable-inspired supper club" dubbed Natural Selection.
Natural Selection sits just down the street fron Vita's Alberta address, and the all-vegetarian, four-course, pre-fix menu (inspired by the "traditional rustic styles of France, Italy and Spain") features herbivore-friendly options like truffled leek and celeriac raviolis, Moroccan filo empanadas, and cumin scented romanesco broccoli. Clyde Common and Olympic Provisions brandmasters OMFG Co. will handle the branding, while Fix will tackle the interior. Projected opening date: Spring 2011.
