Here's another plotline for ya, Portlandia: Southeast's vegan-goes-Italian restaurant Portobello Vegan Trattoria has launched a line of animal-product-free, all-certified-organic, fresh pasta: Dubbed Cucina Cascadia, chef Aaron Adams's ravioli, spaghetti, and linguine is available at the People's Co-Op and at the restaurant (extra bonus points if you bring your own containers, as Portobello aims to reduce packaging waste).
