The Portland Meat Collective has released its Winter 2011 list of butchery courses, and in addition to how-tos in sausage making and creating pig's head charcuterie, the organization is offering some knife training to those of the fairer sex. "Ladies Home Butchery: Basic Pig Butchery for Women Only" encourages women to get in on the action, with Pastaworks alum Tray Satterfield and PMC founder Camas Davis conducting the "cultural experiment" that'll show ladies how to cut some serious meat.
Per the PMC website: "We hesitated on this one. Just seems like in some ways there’s no need to create more separation in an industry where there’s already been a lot of separation (i.e. the meat counter has been a man’s world for way too long). But over the course of the past year we’ve had a lot of classes that were only attended by men, and we’ve had none that were only attended by women." Participants will tackle pig-splitting using several European techniques and collect some meaty cooking tips. The female-only class (limited to a dozen participants) is scheduled for January 29; registration required.
