Looks like work is officially underway at the NW Industrial outpost of Olympic Provisions, which (finally!) is taking over the spot once occupied by Carlyle: Co-owner Tyler Gaston and salumist Elias Cario twatted this image earlier today of pre-installation work for the upcoming production/retail/dining space.
Back in December (and following the departure of chef Jason Barwikowski), a press release announced that OP's new facility (tentatively titled Olympic Meats) "will increase production abilities, while the retail space will feature an expanded line of charcuterie and cheeses, a simple lunch and dinner menu of sandwiches, salads, rotisserie meats and Schmaltz-roasted potatoes, an oyster bar, and a full bar and retail wine wall." Opening date still TBD.
