Another day, another new Portland transplant with an intriguing resume: Grand Central Baking's Portland operation has brought in a heavy-hitter to head up its bakery operations, naming Sean Coyne — an alumni of Thomas Keller's Per Se and Bouchon Bakery — as its new head baker. Coyne replaces former baker Mel Darbyshire, who now oversees baking operations in Seattle. In a press release, Coyne says of Portland vs. NYC baking style: "The scene is similar. There's a little bit more of a rustic aspect to some of the New York breads — they're baked darker and the hydration is higher. Here, there's more of an emphasis on quality of flour and ingredients and the production method." [EaterWire]
