To whet appetites for next week's Portland Cocktail Week (more on that later), the Oregonian sits down with nine big-named bartenders — Shoemaker! Morgenthaler! Klus! — around town to collect their thoughts about how PDX's cocktail scene is evolving. Says Park Kitchen bar manager Mary Bartlett, "When I first started, there were only a handful of bars where you could order a well-made cocktail. Now, there's at least one in every neighborhood. Now I'm expecting to see a new wave of cocktail bartenders move to town that includes a lot more women."
