Simpatica Dining Hall alum Scott Ketterman, who left the supperclub kitchen in late August after four years of service, has announced his next project — Crown Paella, an event company "specializing in giant paella and San Sebastian-style tapas."
Ketterman made his unofficial debut as giant-paella-master during a Portland Culinary Alliance event two weeks ago, and according to a press release, in addition to private events, "expect to see a series of pop-up dinners focused on different regions of Spain and San Sebastian Style Tapas events at restaurants and bottle shops in and around Portland." An online menu reveals five paella recipes available for events, in addition to a large selection of hot and cold tapas (oxtail-stuffed piquillo peppers; Spanish octopus with smoked paprika and potato).
