Of the snazzy plaid- and suspenders-wearing bartenders: "I told all of them to... rent or watch an episode of the HBO series Deadwood, and for them to choose a character and dress that way from the waist up." Also, as for the lack of lumberjack decor: "I didn't want to go too hard with it, with the aprons and the clothing. We went, do we print our name on the napkins or do we wait?
