The Oregonian's Michael Russell serves up a big scoop of expansion news (puns!): Salt & Straw, the ice cream shop that went from cart to brick-and-mortar to Oprah favorite in like 15 seconds flat, already has expansion on the brain. Owner Kim Malek confirms to the O that Salt & Straw will open a second location on NW 23rd and Kearney, in the space most recently occupied by a branch of Mio Gelato. (Mio shuttered earlier this year, after Bamboo Sushi moved into the building as part of its own west side expansion plans.)

Per the article, the new shop will feature more of a cafe atmosphere, with additional coffee and pastry options, and Stumptown has been tapped to help develop the coffee program. Also a possibility: collaborations between ice cream recipe master Tyler Malek and the Bamboo Sushi chefs. Salt & Straw West's projected opening date: Spring 2012.
