Winter Market Shopping with Original's Ryan Bleibtrey

This is Market to Menu, in which Eater shadows a chef's trip to the Portland Farmers Market, following the trajectory of Oregon's freshest ingredients from market stall to restaurant plate.

Since Eater's last trip to the farmers market, things have gotten decidedly more... autumnal, to say the least. The Original's Ryan Bleibtrey scoured the Hollywood Farmers Market's first-ever winter market for ingredients to transform into a weather-appropriate, comforting dish, achieving a Market to Menu first by eventually including all shopping items on the same plate. Pie pumpkins are turned into a pumpkin gnocchi special served with roasted cippolini onions, golden chanterelles, and mustard greens. Apples from Kiyokawa Family Orchards find their way on the same plate in applesauce form, while shaved black truffles (and braised bacon, not a market find) top off the dish.
