Natural Selection, the upscale, all-vegetarian Alberta spot brought to you by Vita Cafe owner Aaron Woo, has set an opening date: March 17. Eater got the sneak peak inside the space designed by local firm FIX studio: The 700-square-foot space houses about 30 seats lined up parallel to the open kitchen, while the world's most adorable bar cart (handmade, obviously) holds libations in a compact, rustic touch.
Woo, a Clarklewis alum who cooks up casual vegan fare (fresh breakfast scrambles, burgers, and sandwiches) at Vita, will offer a nightly four-course fixe prix dinner for $35, giving guests a choice between two items for each course (everything, however, is also available a la carte). Recent sample menus highlight intriguing options like frisse and fuyu persimmon salad (gluten-free and vegan); Moroccan filo empanadas in a curried tomato sauce (vegan); Catalonian mushroom and bean stew; and a roasted fennel and beets entree served with crispy polenta and zinfandel beet sauce.
An open house is set for March 16, with the official opening the following evening, March 17.
