Welcome back to Chef in the Kitchen, a new(ish) recurring Eater photo feature where photographer extraordinaire Allison Jones boldly goes where few diners have gone before — into Portland restaurant kitchens — to get a sneak peek of the chef du jour hard at work making stuff to put in your mouth.

If Masahiko Kobe from the original Iron Chef didn't already lay claim to it, Tabla chef Anthony Cafiero could totally be crowned the "Prince of Pasta." Eater goes into the kitchen with Cafiero as he mixes and rolls dough for agnolotti ("pinched" ravioli originating from Piedmont, Italy), then "stuffs" them with short ribs and tops 'em with a house-made butter sauce. Our first thought: That's a lotta eggs.
