In a very long feature, the New York Times explains today that veggie burgers have, of late, "exploded into countless variations of good, and in doing so they’ve begun to look like a bellwether for the American appetite." Proof by the numbers? According to a market research firm, the number of menu items labeled "vegetarian" or "vegan" grew about 26 percent between 2008 and 2010. [NYT via -ENY-]
