A big fan of surprises? Gilt Club chef Chris Carriker is experimenting with omakase-style experiences, unveiling a new series of "Chef's Table" dinners at the swank Old Town spot. With 48-hour notice and a party of six or more, Carriker will cook up a multi-course meal for your group loosely centered around a theme — Colin the chicken is one; going "Whole Head" with a roasted, brandy-glazed pig head is another, with preps including fried pig ear and steamed jowl buns — where most of the courses are cooked up to the chef's whims of the evening.
