Time to Cook The Pigs For Fat Tuesday

Here's a quick pic and an early morning peek of chef Sarah Schafer roasting the two pigs she'll be carving up tonight for Irving Street Kitchen's six-hour Fat Tuesday celebration at the Southern-influenced Pearl restaurant. Appropriately enough, she's wearing an New York Fire Dept sweatshirt for her "hot" job. It's almost time to eat, kids.
