As part of Eater's first ever burger week, chefs at four Portland restaurants that are a tad burger-phobic agreed to make a special Eater Burger, just for us. Every day we'll highlight a new off-the-menu creation... and today's offering, by Irving Street Kitchen's Sarah Schafer, can be yours during happy hour (and brunch) this week.

"There's so many people who do good burgers in this town," says Irving Street Kitchen chef Sarah Schafer of her normally burger-less menu. "So I [originally] didn't wanna mess with it." But recently, Schafer's been experimenting with a burger on the weekend brunch menu (pair it with a PBR for $3!), and she took on Eater's burger challenge as a way to amp up the current offering.
Schafer's Eater Burger combines ground beef, fresh avocado, house-made truffle mayo, and gruyere ("it melts better," Schafer says) on a Grand Central sesame-seed brioche bun. But in a nod to her Southern-influenced style, Schafer adds strips of her house-made tasso bacon (it's a Cajun-style smoked pork) to the top for some serious pork love.
And if you want a bite, Schafer's serving up the special Eater Burger during Irving Street's happy hour all this week and during brunch service this weekend (with a side of fries, natch)... should the response be hearty, it may make an appearance on menus for an even longer duration. Get some.
