Stuffing Patties with Lucy's Original Chef Evan Dohrmann

Welcome back to Chef in the Kitchen, a recurring Eater photo feature where we boldly go where few diners have gone before — into Portland restaurant kitchens — to get a sneak peek of the chef du jour hard at work.

In keeping with the Burger Week theme, we return to Chef in the Kitchen with an inside look at the prep kitchen of food truck Lucy's Original (if you're ever wondered how they stuff those meat patties, here's your answer — meat molds!). Former Little Red Bike Cafe chef/owner Evan Dohrmann does most of the cooking and on-cart griddlin', while partner-in-crime Ali Jepson mans the sauces and spreads station in the prep kitchen. Here, Dohrmann cooks up the classic American cheese-stuffed patty.
