Welcome back to Chef in the Kitchen, a recurring Eater photo feature where we boldly go where few diners have gone before — into Portland restaurant kitchens — to get a sneak peek of the chef du jour hard at work.

Chef Aaron Woo collected major buzz even before the opening of his Alberta restaurant Natural Selection — finally, a city that's supposedly overrun with vegetarians and vegans gets an upscale meatless dining room (that's also gluten-free-friendly). Eater snuck in the kitchen as Woo whipped up hazelnut blini with asparagus, turnip, chioggia beet salad, and carrot cream, which is offered as a first-course option on the prix fixe, four-course vegetarian menu. And for once (!!!), we can totally certify that no animals were harmed during the making of this photoshoot.
