Looks like Olympic Provisions isn't the only salami-slinger in town. As promised, Eric Finley and Paula Markus, the folks behind City Market's Chop Butchery, have opened a stand-alone charcuterie and butchery shop behind brunch-happy biz Tasty N Sons. Chop Charcuterie & Butchery, which officially opened for business yesterday, features deli cases stocked with house-made salamis, pates and mousses (in options like venison and bourbon chicken), pancetta, head cheese, and (regular dairy) cheese.
For lunchtime visitors, a selection of sandwiches ($4.50 half, $8 whole) is available featuring Chop ingredients: "El Cid" features an herbed leg of lamb with arugula on whole wheat; "The Londoner" lays out rare roast beef, horseradish, and dijon on a baguette; and the "Italian" piles on the meat with ham, coppa, salami, and mortadella hanging with provolone, roasted red peppers, and other veggies on a roll. Chop is open for business Tuesday through Sundays, 9am to 6pm.
