Timothy Wastell Leaving DOC Kitchen; Paul Losch Steps In

Major shuffle ongoing in DOC's adorable front-of-house kitchen: owner Dayna McErlean announced this morning that Timothy Wastell, one half of the Wastell/Jobie Bailey duo that's been cooking together at DOC for about a year, is departing for a new position at NE wood-fired-oven restaurant Firehouse. Wastell's last day at DOC will be June 18.

But a successor has already been named: Paul Losch, currently of Pearl District wine bar Vino Paradiso, will step in to team with Bailey (Losch's last day at Vino Paradiso will be June 16). According to the release, all three chefs will cook together during service on the 17th and 18th, with the Bailey/Losch tandem making its official debut on June 22.

UPDATE: Paul Losch had this to say about his move: "Timothy Nishimoto at VP gave me a great chance to build a kitchen and menu that I can stand behind, and the restaurant can be proud of, and I'm extremely grateful for that. However, the opportunity to join DOC was one that I couldn't pass. I have a great respect for what Timothy Wastell & Jobie do at DOC, and think they, along with Greg Perrault before, have built one of the strongest food programs in the city. It's an honor to be asked to work with Jobie and continue to build upon those past successes. I can't say what the future will bring, it will just be a natural evolution as we begin the process of collaboration and creation, but I expect DOC to remain a place for the neighborhood and city-at-large to be able to come for great food and drink delivered with honesty and care."
