Oregon is home to a lot of restaurants, bars, wineries, and breweries, and though certain spots generate all the buzz, there are tons of hidden gems that the majority of Portlanders — ourselves included — just aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's many food luminaries to share their under-the-radar recommendations for a weekly feature dubbed Dining Confidential.

It's no secret that chef Chris Czarnecki is a 'shroom kinda guy. He literally grew up working at the Joel Palmer House in Dundee, OR, where his truffle-master dad, Jack, showed him the ropes about cooking with wild mushrooms and truffles. The younger Czarnecki now leads the charge at the Joel Palmer House, and being a wine country native, this guy's got the perfect stop for your summer wine country outings.
"My wife and I love Red Hills Market. Local beer, wine, and great food. [We] can pick up cheese to take home, or grab a table for one of their amazing thin crust wood-fired pizzas. There's just something about their simple margherita pizza that I love — it's all that natural smoke imparted from the wood-fired oven. Their cheese selection is top notch,too. I'm a stinky cheese guy, so I usually go for their Red Hawk from Cowgirl Creamery. It's definitely our favorite local hang out."
