Portland's Nuevo Latino

Oba Restaurante chef Scott Neuman is in Miami this week to judge the Taste of the Caribbean Culinary Competition, and Eater Miami sat down with the chef to talk differences between Nuevo Latino cuisine in Miami and the Pacific Northwest. According to Neuman, his PNW-influenced menu features more local, sustainable ingredients combined with authentic techniques... and maybe some unexpected inspiration. "Here in Portland Thai cuisine reigns," he says. "I'm actually meeting with a chef from Thailand this weekend to discuss how we could potentially work together combine our cuisines." [-EMIA-]
