Oba Restaurante chef Scott Neuman is in Miami this week to judge the Taste of the Caribbean Culinary Competition, and Eater Miami sat down with the chef to talk differences between Nuevo Latino cuisine in Miami and the Pacific Northwest. According to Neuman, his PNW-influenced menu features more local, sustainable ingredients combined with authentic techniques... and maybe some unexpected inspiration.
