Chef Caleb Mcbee, who made waves with his European-influenced "modern apothecary" Apotheke from 2005-2007, has quietly opened a new venture on E. Burnside dubbed Skin & Bones — it celebrated its grand opening this Tuesday.
A member of PortlandFood.org shares the spot's opening menu, which flaunts Pacific Northwest influences: Among the four main courses are a bison ragu with grits; roast chicken galentine; and stewed chickpeas served on wild rice with fresh cream. (A soft opening menu featured bites like a potted duck and yukon potato tart, and chicken roulade with dumplings.) The phone seems to be disconnected at this time, but according to the Facebooks, from here on out, the bistro — which serves breakfast, lunch, and dinner — will be open Tuesday through Saturday, 9am to 10pm.
