The O's Grant Butler steps into the kitchen with Beast chef/owner (and recent Top Chef Masters contestant) Naomi Pomeroy, collecting recipes for three of Pomeroy's successful dishes from the show. To assemble your own Masters three-course meal, recipes for porcini-braised chicken thighs, celery veloute, and chocolate truffle cake await — and for the thighs, the secret ingredient is a handful of salt. "You don't want to under-season your meat," Pomeroy says. "That's a big mistake that a lot of people make. I really go for it with the salt, particularly on the skin side." [FOODday]
