Stumptown founder Duane Sorenson's upcoming SE Division restaurant/bar, the Woodsman Tavern, has been shrouded in secrecy since rumors of its build-out began.
But at last night's Counter Culture event at Anne Amie Vineyards, former Olympic Provisions chef Jason Barwikowski fiiiinally confirmed his involvement with the project, dishing out vittles under the Woodsman Tavern banner. At his unofficial coming out party as the Woodsman chef, Barwikowski also explained the inspiration for the name: A specialty wood-fired oven by Bellingham, WA's Wood Stone Corporation will provide the menu's focal point (the oven, Barwikowski notes, is popular in Spain, but fewer than a dozen are currently in use in the United States). Menu details are still in the works, though Barwikowski says most dishes will visit the oven at some point during their cooking process.
The Woodsman Tavern's projected opening date: mid-September.
