Bamboo Sushi owner Kristofor Lofgren is not only facilitating opportunities for his customers to tag their own shark (with electronic tags, not graffiti), he's taking Bamboo's sustainable model to the next step. Lofgren tells GOOD magazine that a Bamboo outpost is in the works for San Francisco, and the spot's ethos may extend beyond there: "[Lofgren] plans to trademark 'consumer regeneration,' the idea that consumption can restore the environment rather than detract from it."
