NE ALBERTA: NE tapas spot Lolo Restaurant — which once featured an Eater-certified Hot Chef in the kitchen — is undergoing a concept switcheroo: The spot has been sold to former Lolo general manager and menu planner Kate Verrill, who, along with partner Rick Barnes, plans to rebrand the restaurant into Bar Lolo to "imbue a more traditional, casual, Barcelonan tapas bar setting," according to a press release. The spot will soon undergo an interior remodel (scheduled to be completed in early September), and an expanded cocktail list will add to the newfound "late night" atmosphere: Bar Lolo plans to be open until (at least) midnight, every night.
