FoodDude reports that former Fin chef Trent Pierce, whose highly anticipated "Japanese style" spot Wafu is scheduled to open within the next few months, has penciled in some dates for a series of preview dinners.
According to the official site, Pierce (and partner Kurt Huffman of ChefStable) are accepting reservations for dinners on Wednesday, August 17 and Thursday, August 18. $60 includes dinner, gratuity, and access to an open bar (with cocktails by newly named bar manager Alan Akwai of Central and St. Jack), and the opening menu provides a little hint as to what to expect from future Wafu offerings: "Examples of some dishes that may be on offer are Gokujan black butter pork belly with snap pea, mint, and scallion ranch; robata-grilled quail with quail egg, pancetta, sweet miso plum, cucumber pickle, taré, and rice.
