Potbelly Sandwich Shop isn't the only sandwich chain eying the Portland market. The California-based Togo's (which dubs itself a "West Coast Original since 1971") aims to open as many as 30 restaurants in Oregon over the next few years, according to industry publication FastCasual. Togo's currently operates five locations in Oregon (with new outposts slated for Bend and Eugene), and "is actively recruiting passionate single and multi-unit operators in Portland." [FastCasual]
